Better LATE than NEVEr....LOL

Hello Everyone....
I am bit late with my Halloween Postings...Was supper busy I had not had time to post up or follow up with you all....

These are French Vanilla and Pumpkin Pie Cupcakes for my Sweet Lil Nephew's, Jay JaY the Terrible, 6th Birthday....







The Purple Cupcakes were purposely made to look like they had gone, gone moldy...Lol....

I bought the Haunted House Cupcake tiers through ORIENTAL TRADING....they hold about 24 standard cupcakes each...They were a hit at both parties....

Pumpkin Chocolate Chip Muffins Recipe
This recipe makes 12 muffins
Muffin Ingredients
•2 cups flour
•2 teaspoons baking powder
•1/2 teaspoon baking soda
•1 teaspoon ground ginger
•1 teaspoon ground cinnamon
•3/4 teaspoon salt
•1/2 teaspoon allspice
•1 egg
•3/4 cup brown sugar
•3/4 cup canned pumpkin
•2/3 cup buttermilk
•3 tablespoons butter
•1 teaspoon vanilla extract
•1/2 cup milk chocolate or semi-sweet chocolate chips (depends on your liking, the milk chocolate will be sweeter)
Baking Instructions
1. Preheat oven to 375 degrees
2. Line cupcake tins with paper or foil liners
3. Combine dry ingredients in a medium bowl, and mix together.
4. Combine egg, brown sugar, pumpkin, milk, butter and vanilla in a large bowl
5. Gradually add wet mixture to dry mixture, until blended.
6. Fill cups 2/3rds full.
7. Bake for 18 -22 minutes until an inserted toothpick comes out clean
If made the night before, warm before serving. Cover muffins with foil and warm in a 325 degree oven for about 10 minutes.
Topping ideas
Frost or top with the following:
• Cream cheese frosting
• Powdered sugar
• Cinnamon and sugar
• Dab of butter
• Butter cream frosting
• Butter mixed with cinnamon and sugar
• Chocolate, colored sprinkles or sugar crystals

***I USED HEATH CRUMB TOPPING INSTEAD OF CHOCOLATE CHIPS***

I used the Martha Stewart's recipe which at first I was iffy about.  When I was preparing the whipped cream over the simmering pot i thought it wasn't going to come out right.  Behold, it actually became thick and workable.  Thank You Martha...
